English Country Garden Cocktail

A bit of a controversial option for Christmas as most beverages are warm and spiced. However if you would like something cool and refreshing to deal with holiday stress this one is for you.

  • 100ml Gin

  • 100ml Hooch Lemon

  • 100ml Hooch Apple

  • 100ml Stella Artois Elderflower Cidre

  • A wedge of Lime

  • 3 slices of Cucumber

  • A stalk of Mint.

    For those who prefer, Vodka can be used as a stand-in for the Gin.

    This option is particularly boozy so feel free to switch out to cloudy lemonade, apple juice and an elderflower presse as it is equally refreshing.

Fully Loaded Nachos

A perfect snack food for 4 and a creative way to use your Christmas dinner leftovers. With homemade guacamole and salsa.

  • 200g Tortilla Chips

  • Shredded Chicken (or other leftovers)

  • 2 Large Tomato

  • 1/2 Red Bell Pepper

  • 2 Onions

  • Oregano

  • Jalapenos

  • Sriracha

  • 1 Avocado

  • Vinegar

  • Black Pepper

  • 100g Cheddar Cheese

  • 3 Mozzarella Balls

  • Sour Cream

  • Chives

  • Garlic

  • Lime

To begin preparations for the nachos, you must first make your sauces.

To make the Salsa, finely chop the onions and tomatoes together. Mix with a clove of crushed garlic, a teaspoon of black pepper, a teaspoon of oregano, tablespoon of vinegar and a tablespoon of sriracha.

For the Guacamole, peel, remove the stone of the avocado and proceed to smash with a fork add a a tablespoon of heavy cream, the finely sliced red pepper, the juice of half a squeezed lime and a crushed garlic clove.

To actually prepare the nachos layer the bottom of a tray with the tortilla chips, add pockets of guacamole and salsa, then cover with shredded meat and grated cheese. Repeat the layers to the top then slice the mozzarella balls on top and spread. Put in oven 150 degrees for 10 mins.

Once finished add pocket of sour cream mixed with chives on top with sliced jalapenos.

Chilli Honey Garlic Pork

A delicious sweeter pork in sauce. A delicious shared meal perfectly paired with rice and a light salad.

  • 4 Tablespoons of Honey

  • 2 Tablespoons of Soy Sauce

  • 1 Tablespoon of Olive Oil

  • 1 Teaspoon of Chili Flakes

  • 1 Teaspoon of Paprika

  • 3 Cloves of Crushed Garlic

  • 1 Teaspoon of Black Pepper

  • 500g of Diced Pork

  • 2 Tablespoons of Sake (or any white wine)

In an oven proof dish mix together all the ingredients, cover in foil and put in the oven 180 degrees for 1 1/2 hours or until fully cooked.

Stuffed Chicken in Blankets

Impress any guest with this Christmas special. This recipe serves 2 but ingredients can easily be halved or doubled.

  • 2 Chicken Breasts

  • 4 Slices of Bacon

  • Goats Cheese

  • Handful of Spinach

  • 1/2 a Onion

  • Salt and black pepper

  • 1 crushed Garlic clove

Place a sheet of foil down (at the end this will be closed so that the chicken can cook in a parcel. Lay down 2 slices of bacon (per chicken) next to each other. Place the chicken breast on top of that, slice open the side, so that you are able to put ingredients in. Add seasoning to inside and outside, the crushed garlic and salt and pepper to your tastes. Evenly stuff the inside the chicken with finely diced onion, goats cheese and spinach.

Use the bacon under the chicken to wrap around the chicken and hold the stuffing inside. close the chicken in the foil leaving a hole for steam to escape. cook in oven at 180 degrees for 45 mins or until fully cooked.
